Corey Hogan Plans Bakery for Village of Ellicottville

The Village of Ellicottville will get a new bakery this summer courtesy of developer Corey Hogan and his wife, Jennifer.

While a name has not yet been finalized – Ellicottville Bread Co. is among the contenders – plans call for offering house made bread along with pastries such as scones, muffins or cinnamon buns as well as coffee drinks.

The bakery will occupy about 2,000 square feet at 5 E. Washington St. at the Ellicott Development-owned Washington Street Plaza, adjacent to a 2,200-square-foot space leased by Tiveron Law, the law firm Hogan recently sold while he waits out a two-year suspension.

“It’s the ideal retail location,” said Hogan, who said a bakery was the No. 1 suggestion when he and his wife asked around for ideas of what to put in the space.

“They said if you wanted a decent loaf of bread, scones or baked goods, you had to go to Orchard Park.”

The plaza at the intersection with Route 219 is also home to Finnerty’s Tap Room.

Hogan says he was a fan of the defunct Montana Mills Bread Co. chain, which started in Rochester. The couple have been visiting bakeries and cafes in their travels over the past several months picking up ideas and inspiration.

The format will include a counter with seating at the front window, as well as a chalet-like design with a fireplace and couches as well as several tables.

Plans call for a limited menu with maybe 10 items, with bread available for sale to the general public as well as area restaurants. They’re hoping to recruit someone full time with baking experience to run the business.

“We’re just trying to make a good loaf of bread,” he said.

An opening is expected by June or July.
